There’s not much left, but tonight was homemade calzone night. I made an extra batch of GF dough in the bread machine the other day, and stuck it in the fridge. It wasn’t quite a pizza dough texture, but it turned out a lot better than my first attempt a few years back, which was leaden and disappointing enough that I just didn’t try again until now.
Bad photo, but we shared a spinach and ricotta filled one with mozzarella and some sautéed onion and garlic (which would be the odd-looking yellowish stuff in the remaining piece there). Then assembled another one each. Mine there had ham, a little salami, ricotta, sautéed green pepper, mozzarella, and a little of the onion. With some quick marinara. There was enough calzone in the end that the salad will just have to wait for tomorrow. ;)
Pretty good, with enough leftovers for lunch. It was a little more spoons-intensive than I really needed today, but worth all the standing up anyway. I’ve missed being able to just order calzone or stromboli, and maybe I can even get the crust a chewier texture next time!
