Shimeji mushrooms - Hypsizygus cf tessellatus
Found in America and Europe, Hypsizygus tessellatus (Agaricales - Tricholomataceae) falls under the umbrella concept of the Japanese “Shimeji” mushrooms. Firm textured, this mushroom is considered one of the most “gourmet” of the Oyster-like mushrooms.
With white, cream or yellowish caps, this edible species grows in clusters on wood.
